Peach Cobbler

I bought some peaches at the Farmer’s Market about a week ago and they were starting to be overly ripe and mushy, so rather than let a bunch of wonderful peaches go to waste, I took the advice of some of the ladies from my small group and made a peach cobbler yesterday. I’ve never made a cobbler before, but it was surprisingly simple...possibly due to the fact that the recipe I chose to use was entitled “Easy Peach Cobbler.” All the recipes I saw online seemed to be about the same so I’m not sure that this recipe is any easier than a plain ol’ peach cobbler recipe. But who cares what it's called because it turned out really well and Justin gave it his seal of approval so I was happy. If you try out the recipe, I recommend warming up the cobbler before eating and put vanilla ice cream on top if you have any. Yum.

We made this last night too. Dee-lish! We put in slightly more peaches, a little less butter, substituted some brown sugar for white and some wheat flour for all-purpose. I think you could cut the butter in half and do a half wheat flour substitution to make it a tad healthier without compromising flavor. Can't believe how much it makes too! We'll have to give some away or I'll easily eat the whole thing.
